Sausage Casserole
12 ounces egg noodles 1 pound mild sausage 1 can reduced fat, condensed, cream of chicken soup 1 cup, reduced fat sour cream 2 tablespoons grated Parmesan cheese (small chopped onion if your children will eat)
Cook noodles and sausage. Drain. Mix with the remaining ingredients and place in baking dish. Cook at 350 for 25/30 minutes.

Stuffed Pirate Ships!
6 medium baking potatoes 1 lb ground beef or turkey 2 tablespoons chopped onion 1/3 cup light sour cream 2 tablespoons butter 1 tablespoon Worcestershire sauce 1 tablespoon salt 1/2 tablespoon garlic salt 1/2 teaspoon chili powder 3/4 cup shredded cheese
Bake potatoes at 375 for 1 hour or until tender. Cool. Meanwhile, in a large skillet, cook the beef/turkey and onion over medium heat until the meat is no longer pink; drain.
Cut a think slice off the top of each potato. Carefully, scoop out pulp, leaving a thin shell; place pulp in a bowl. Add sour cream & butter, Worcestershire, salt, garlic, chili powder then mash/beat until combined. Stuff into potato shells.
Place on ungreased baking sheet, sprinkle with cheese, bake at 350 for 15 minutes or until heated through.

Momma's homemade Meat Loaf
1 egg, lightly beaten 2/3 cup milk 3 slices bread, crumbled 1 cup shredded cheese 1 medium onion, chopped 1/2 cup finely shredded carrot 1 tablespoon salt 1/4 teaspoon pepper 1-1/2 lbs ground beef 1/4 cup brown sugar, packed 1/4 cup ketchup
In a large bowl, combine the first eight ingredients, then mix with cooked and drained ground beef. Shape into a loaf.
In a small bowl, combine the brown sugar & ketchup and spread over loaf. Place in a baking pan and bake at 350 for 60-75 minutes.
Meat thermometer should read 160 or more. Drain. Let meat stand 10 minutes before serving.

Tips for the grocery list
- Make your weekly menu on a day of the week where you have 1 hour to yourself! Write out every day of the week, and write down what your is consumed...
Example:
Monday: Breakfast: Kids: 2 bananas & 2 oatmeal, Mom: Smoothie & Nutri-grain bar Lunch: Mom: 1 lean cuisine, 1 bottles of water, Dad: Ham sandwhich, apple, chips Dinner: lemon chicken & veggies
Tuesday: Breakfast: kids & mom: cinnamon raisin bagels & cream cheese Lunch: Mom: Healthy Choice Pasta, V8, Dad: lean pocket & pears Dinner: Angus stir fry over rice & veggies
- Then write down the ingredients for all those recipes: chicken and veggies, angus stir-fry, bread, sliced ham & cheese, apples, chips, fruit for smoothies, lean cuisines, lean pockets, etc.
- Group it all together by dairy, meat/fish/, juice/milk, produce......and get your list. Dont forget to check your laundry & dish detergent, light bulbs, clorox wipes, windex, toilet paper and paper towels before you finalize!
- Once you bring home your groceries, prep the meals that you can ahead of time. Cook all your ground beef, steak, sausage and noodles and store in tupperware in the fridge. Once you are ready for Tuesday night stir fry, all you have to do is toss it all together, and heat it up! Marinate all your meats in plastic ziplock bags so they are seasoned and ready for grilling, put that chicken in a bag with some lemon, oil & garlic and come Monday, it will be delish!
Not only will this save you time, but A LOT of money! How many times have you loaded up the cart with produce that you have had to toss out because you couldn't find a way to incorporate it into a meal? When its time for dinner, whether Mom or Dad or the nanny are cooking it, they know whats on the menu, where to find it and how to cook it! All it takes is an hour to plan!
