Salmon Salad


2: 6oz pieces of salmon, rub top with olive oil, sprinkle salty/pepper
bake for 20/25  minutes at 350

Salad:
cucumbers
pine nuts
cherry tomatoes
red onion
carrots
spring mix salad

Dressing:
1 cup extra virgin/light olive oil
1/2 cup balsamic vinegar
 3 crushed garlic cloves
 1 teaspoon fresh minced basil
 1 teaspoon oregano
 1/4 teaspoon fresh pepper
         Mix, shake, serve!


 After I bake the salmon, I break it up into bite size pieces, then I put it on a cookie sheet and drizzle the dressing over then broil for 5 minutes.....then pour the rest of the dressing over the salad when ready!!
