Tuna Salad
15oz. White Tuna
1/4 cu. red onion diced
1/4 cu. celery diced
1/4 cu. carrot diced
1/4 cu. lite mayo
1/8 cu. lite Ranch dressing
1/4 teaspoon salt & pepper
Mix together in bowl, cover and refrigerate for 30 minutes before serving
EXTRA FLARE:
8 cherry tomatoes , halve.
Pour 1/8 cup balsamic vinegar and 1/2 teaspoon dried basil on plate
put tomatoes face down in mixture, cover and refrigerate for 30 minutes.
Plate:
2 cups of "spring mix" lettuce each plate
Top with sprouts
Use ice-cream scooper to make 3 small piles of tuna salad
Surround with tomatoes
Mix and Enjoy!!
